Born and raised in Beechworth, Victoria, Chris developed a curiosity for wine making in his teens. His interest was nurtured by Barry Morey at Sorrenberg while he worked with him on vintages before going on to complete a double degree in Viticultural Science and Wine Science at Latrobe University in Melbourne. His early passion for Chardonnay stayed with him as he went on to complete seven vintages on the Mornington Peninsula (with Kooyong Estate, Portsea Estate and Paringa Estate) and five in Burgundy.
“My philosophy for Sentiō is a work in progress. Making wines that represent where they’re from is the fundamental point. I always loved seeing wines that give a story of the vineyard and the region.”

Luke and Mac are hosting a masterclass focusing on Macs’ Rieslings and cutting edge EB range. Come along to have a deeper look into these fascinating wines and some delicious snacks.
Riesling has long been a darling of the wine aficionado, producing wines of great complexity, depth & ageing potential. Its’ reputation & popularity have ebbed & flowed over the years, but thankfully it is again in the spotlight. Excellent handling in the hands of experienced growers & makers has forged renewed interest in this wonderfully expressive grape, Mac is very much a forerunner in this revolution. Working with two vineyards in the Strathbogie Ranges, Avenel produces the dry Riesling from granite & pink Quartz soils whist Caveat produces the RS ( Residual Sugar ) Rieslings from granitic, sandy loam soils, the sugar levels determined each season by the startling acidity of the fruit, harmony being the goal. The EB ( Experimental Batch ) range is a project that encourages the staff to seek the unusual & explore the unknown. Embracing what they don’t know or feel comfortable with produces wines that are daring & a little fun, pushing the boundaries and sharing what they feel has been a ‘successful’ experiment.

The 4th in our series of Winter wine virtuals as we dissect the marvel of Cabernet Sauvignon and its related wines.
Following Rhone, Bordeaux & rioja we head to focus on new world wine styles and see what makes the classic Aussie Cabernet tick.
The class is around 2 hours and you receive 6 x100ml wine samples carefully dedicated to show the snapshot of differing styles, winemakers, properties & vintages in one session. Guided notes and a Sommelier are yours for the evening as we debate the why’s, the wheres’s and the how’s of Cabernet and its blends.
The Australian pioneering blends of the 50’s and 60’s were often labelled dry red and essentially blends of Cabernet Sauvignon & Shiraz. This style is now out of general fashion though other varieties do come into play with these blending techniques. The classic Margret River Bordeaux blend of Cabernet & Merlot, the South Australian Coonawarra Cabs and the less heralded but equally divine Yarra Valley reds will be talking points and perhaps an Old World benchmark for comparison. Whatever the wines we invite you to join us if Cabernet is your thing as we get tannic for the evening with some classic red wines from Australia. Come find out with us why Cabernet learns itself so well to its common blending partners of Merlot, Petit Verdot and Cabernet Franc.

A 3rd Masterclass and debate for the cooler months focused on the traditional wines of Rioja - based on Tempranillo grape.
Here at Vinified we have long championed the Rioja region for delicious and age worthy examples of Spanish red & white. We thought it necessary to add to our Winter Masterclass series with this region.
You likely know the drill by now. 6 100ml samples and a Zoom link. A Sommelier for a couple of hours of tasting, debate & history. It’s great fun and we encourage you to try.
Rioja long distressed by outdated winemaking and lack of market share and knowledge has almost made good wine but recently this could be viewed as excellent wine. Old Gran Reserves spending many years in oak to form liquid gold and matched brilliantly to the cuisine of the region. Offering great value for money and ease of drinking tonight we focus on the red wines based on Tempranillo, Graciano, Garnacha & Mazuelo varieties. We will serve some of our favourites and add a couple of super interesting and older wines too.
In 2007, the Regulating Council of the D.O.Ca. Rioja authorized, for the first time since 1925, the incorporation of some additional varieties within the limits of the denomination, changes that were reflected in two modifications of the existing Regulation approved in 2004. Tonight we explore the past and the present equally as we deep dive into the wines of Navarra!

Fluctuating between absolute commitment and belief while fighting the imposter mindset inherited as a cool climate Australian wine grower, there is still so much to achieve and learn. It’s frantic. It’s considered. And thankfully it’s still tonnes of fun.
This will be a fantastic opportunity to get integrated with Mac and his wines and taste an array of varieties through the evening.

Mario Marson has original cuttings of Sangiovese from the heralded Isle e Olena in Tuscany and his Sangiovese is and was a game changer.

Vinea Marson is a small, family owned and operated winery in the heart of Heathcote in Central Victoria.
The inspiration stems from Mario’s Italian heritage – Mario’s grandfather made Friulano, Cabernet and Merlot and his great-grandfather was chief winemaker for the local padrone. His father, Giuseppe, planted rows of vines in their Melbourne backyard to bring Italian wine to the dinner table each night. Making wine and serving it with plentiful Italian food was a Marson way of life.
Mario and Helen together with their daughters, Laura, Madeleine and Emily, embarked upon their own journey - establishing Vinea Marson. Since 2000 the Marson family have cultivated vines in the ancient soils of Heathcote with dedication and passion, bringing premium quality wine to tables in Australia and overseas.
There will be Champagne half bottles on the evening, Grower and Maison and this is a very special event as Lucy joins us to bring a fresh look at the History of Champagne through her experience and knowledge.
Lucy Edwards has been working in the industry for over a decade and is passionate about sharing the secrets of Champagne. She is an expert in the field and is able to track down
some of the finest wines of the region.
